Pickled wasabi leaves from Kishiwa, Hiroshima in soy sauce. It is spicy and pairs well with sake.
Grilling the anago, which can also be eaten as sashimi, enhances its flavor and richness. Enjoy with salt, wasabi, soy sauce, or to your liking.
