"Hinabeneko Nihonbashi" is a popular medicinal hot pot specialty restaurant that fills up as soon as reservations open. In a quiet space renovated from an old house, the time spent surrounded by the aroma of spices is truly special. The signature menu item, "Medicinal Hot Pot Course (4,900 yen)," features over 10 types of spices blended right in front of you, including dried red chili peppers, goji berries, Sichuan pepper, cloves, jujubes, and cordyceps. The aroma that rises in that moment is breathtaking, and the soup, which becomes more flavorful the longer it simmers, is one of a kind. The spicy soup has a moderate heat and deep aroma, while the white broth is mild and gentle in flavor. Both are "medicinal food" that warms the body. The ingredients include pork, lamb, chicken, root vegetables, mushrooms, and leafy greens, all balanced and ample in volume. Even the finishing Chinese noodles are carefully prepared, ensuring satisfaction until the last bite. Additionally, the drinks made with spices, such as plum wine, dried tangerine peel highball, and homemade gin, are also exceptional.
