Ena Brewing is a small sake brewery located in the mountainous area of Nakatsugawa City, Gifu Prefecture, with a history dating back to 1818. Situated at an elevation of 600 meters in a nature-rich environment, it continues to produce wonderful sake using pure water sourced from Mount Futatsumori and local sake rice called 'Hidahomare.' The region's specialty, Junmai Ginjo sake 'Kujiranami,' offers a refreshing finish and pairs well with food. In a small storehouse nestled in the mountains, it is said that the sake is brewed using hard spring water from the back mountain and local 'Hida Homare'. 'Kujiranami' has a light drinking feel and can be enjoyed with meals. When chilled, it has a pleasant smoothness going down. The unfiltered, raw Junmai Ginjo is particularly memorable. The paste-type sake lees are moist and easy to use. Fish, chicken, and pork marinated in sake lees turn out fragrant and delicious, making cooking enjoyable.
