Sitting at the small counter underground, I felt relieved when the chef casually greeted me. The draft beer I ordered as an appetizer had fine bubbles, and I felt happy from the very first sip. After that, I let them serve me a selection of seafood, and I was excited to see rare items like herring roe and hokke sashimi. I was pleased with the creative ways to enjoy each ingredient, such as squid served with mountain wasabi and kinmedai with liver soy sauce. The sushi rice was easy to fall apart and melded perfectly with the toppings, allowing the sweetness of the sea urchin and sweet shrimp to fill my mouth. Even the miso soup made from shrimp heads that came out at the end was carefully prepared, and I think this is a wonderful place where you can enjoy the essence of Hokkaido from start to finish.
