The sushi rice is a blend of two types of red vinegar and one type of rice vinegar. The moment it enters your mouth, the rice grains gently dissolve, and the harmonious balance of mild acidity and salt enhances the flavor of the toppings. With techniques like kelp curing and marinating, we focus on the seasonal bounty of Hokkaido's sea and land, optimizing each piece. In the omakase experience, we design the flow of temperature, aroma, and texture, allowing you to enjoy a unique world of sushi paired with Hokkaido's local sake, which complements each sip.

The interior has only 8 counter seats, no private rooms, and all seats are non-smoking. In a clean and bright white wooden space, the sound of the knife, the aroma of vinegared rice, and the gestures of sushi-making satisfy the five senses. With the skilled techniques of the chef right in front of you, there is a comfortable distance that allows you to relax and enjoy. Whether it's a special day or an ordinary night, a quietly memorable time flows.

In 2012, 'Sushi Hidetaka' raised its noren in Sapporo. Building on the foundation of Edo-style sushi cultivated at 'Sushi Zen', we continue to walk the path of omakase while layering the seasons of Hokkaido and our unique innovations.
