The menu was exciting with the taste of hamo (pike conger eel) with no impurities, consommé to enjoy its sweetness, richly delicious akaza prawn and bisque, perfectly delicious kuromutsu, and the best chateaubriand. The food was superb. The operation to serve such a large number of dishes in a little over two hours was also excellent. The first dish of sea bream consommé was an instant KO. The extract of the fish's umami, without any cloying taste, was proof that the ingredients and cooking had been perfectly matched. The Aomori sea urchin had a wonderful amount of water content, and the special red sea urchin was well cooked and combined with the rich bisque, it was a gem that could only be tasted here. The hairy crab risotto had a texture where you could feel the grains of rice, and the intensity of the hairy crab flavor in the mouth was astonishing. I had heard that this was a great restaurant, but it exceeded my expectations.

Chef Mineura offers creative dishes that express the charm of pure ingredients, and I admire this restaurant not only for its skills but also for the strong passion for cooking. I have also been taken care of as a chef here.
