Mixed vinegared rice with dried gourd, shiitake mushrooms, and roasted seaweed, topped with fluffy golden egg strands. A popular menu item for both children and the elderly.
We use fatty anago caught off the west coast of Tsushima, Nagasaki Prefecture. The tender anago is simmered in a sweet and savory sauce, making it a perfect match with the rice.
This is pressed sushi made with mackerel and sweet vinegar ginger, wrapped in roasted seaweed.
Roll sushi filled with anago, shrimp, egg, kanpyo, shiitake mushrooms, and cucumber. It is the same thickness as the standard roll sushi, about two bites in size.
Uses conger eel from Senshu. The grilled conger eel is accented with fragrant sansho pepper.
