A satisfying main dish that allows you to enjoy the sweetness of the fat. The flavorful Itoshima pork loin is slowly roasted. The sauce made with shellfish broth, butter, and aosa seaweed harmonizes with the sweetness of the fat, leaving a light aftertaste. This is a dish we highly recommend if you're unsure about your main course.
A deep flavor with aromatic spices. The duck breast, marinated with spiced salt, is roasted to perfection. Served with pumpkin and kumquat puree, seasonal vegetables, and finished with a spiced sauce, this dish offers a delightful contrast of sweetness and aroma.

This is the classic French appetizer! Perfect as a snack with drinks or as a small dish.
The rich flavor of Black Wagyu beef, served with warm bean stew. The roast beef of Black Wagyu sirloin, finished with low-temperature cooking for a moist texture, is accompanied by a French-style bean stew made with green peas, onions, and bacon cooked in broth. The side beans are served like a 'sauce garnie' alongside the meat. The finishing touch of Camembert powder adds depth and richness to the flavor.
Homemade marinated salmon with a smoky fragrance. This dish features carefully marinated salmon infused with a light smoky aroma. The slightly bitter parsley coulis and creamy sour cream sauce enhance the spring-like flavors.
