The flavor varies with the season and the rice, and when first opened, it has a slightly sparkling taste and freshness due to naturally occurring gases. It is a rare sake that allows you to enjoy the changing flavors over time. Please inquire with the staff as prices may vary depending on the stock received.
Nara Prefecture Special Junmai
Special Junmai Sake from Yamagata Prefecture, perfect for dry sake lovers! This special junmai sake is polished to 55% and is recommended as a food pairing with 'Miyama Nishiki' and 'Yuki Geshou'. Jokigen's dry sake has a rich umami and depth typical of junmai sake, finished with a crisp and refreshing aftertaste. It pairs well with any meal and is an enjoyable drink that you can have multiple cups of!
Fukuoka Prefecture Special Junmai
Special Junmai Sake Tanizake from Aomori Prefecture aims to return to the origins of sake, aspiring to create a dignified and authentic sake. It began with the traditional method of brewing pure rice sake, made entirely by hand. The name 'Tanizake' is a surprising choice, based on associations with rice fields, rice, and grains, meaning sake brewed solely from traditional rice.
<Ginjo Sake> This is a super dry ginjo sake with a sake meter value of +20, which is significantly different from the previous image of Kuroki Jozo in Yamagata Prefecture. Bakuren was born from the process of researching a sharp and dry junmai ginjo. Initially, it seemed like a sake that only emphasized its dryness, but after about two years of aging in the brewery, it transformed into a new type of super dry ginjo sake.
<Junmai Ginjo Sake> This sake from Fukushima features a calm aroma and a fruity aftertaste when it enters the mouth. Compared to Junmai, it has a richer aroma and a more intense rice flavor. It has a clean finish and a well-balanced taste.
<Junmai Ginjo Sake> In Miyagi Prefecture, it has a refreshing aroma and a rich, rounded flavor. The more you drink, from the first cup to the second and third, the more umami emerges. Due to the bottle pasteurization, it becomes even softer and cleaner, and it is a sake with a core that develops over time.
