This is a soup made by carefully cooking selected seasonal vegetables to bring out their natural sweetness and aroma to the fullest. We minimized unnecessary seasoning to highlight the gentle flavors of the vegetables. You can enjoy the natural umami and deep richness that spreads with every bite.
Using 'Mankichi Don' from Suzuki Farm in Koriyama, it has been slowly sautéed to a caramel color over the course of a day. Combined with carefully prepared consomme soup, this is a French onion soup that concentrates the umami. You can enjoy its roasted flavor and deep sweetness.
Rich yet not overwhelming. The subtle lingering acidity of the tomatoes stimulates the appetite.
Wrapped in homemade pasta, the foie gras is poached and marinated, simply seasoned with a frothy sauce of truffle, salt, and pepper. A certain woman has repeatedly said she comes to eat this once a week. It is such an attractive ravioli.
Crispy on the outside, tender and moist on the inside. Paired with marinere sauce, it goes well with wine.
The fish can be eaten as sashimi, so it is finished in a mi-cuit (slightly rare) state. Soft and smooth texture. A new sensation.
Foie gras is placed in the center, wrapped in white fish, and quickly fried with breadcrumbs. The outside is crispy while the inside is soft and fluffy. Definitely try it.
The surface is crispy, and the shredded meat is soaked in sauce, making it perfect to enjoy with wine. Please enjoy it with a red wine from southern France!
