The store was spacious, and there were people coming in without a reservation! Perhaps because I visited on a holiday afternoon, there were quite a few Japanese customers! The soup with tofu was included, and I thought the portion was large, but I easily finished the main dish, the yukke bibimbap 🥩🍚. I will visit again when I go to Korea!!

Au restaurant français étoilé Michelin "Kang Minchul" situé dans le quartier de Gangnam. Le chef Kang Minchul, qui a déménagé en France à l'âge de 24 ans, a accumulé plus de 10 ans d'expérience aux États-Unis, à Hong Kong et en France, perfectionnant son art dans les restaurants de trois grands maîtres : Joël Robuchon, Alain Ducasse et Pierre Gagnaire. Son talent était présent dans chaque recoin du menu.
Le concept de ce restaurant est "Cuisine Symphonique". Le menu est structuré en mouvements : "Premier Mouvement", "Deuxième Mouvement", "Finale", "Encore", offrant une expérience où chaque plat s'accumule comme une mélodie.
La salle privée où nous avons dîné avait une décoration magnifique, créant une atmosphère calme et spéciale. Tous les plats étaient d'une grande qualité, et les points qui m'ont particulièrement marqué sont les suivants.
Le Premier Mouvement a commencé par un amuse-bouche, suivi de caviar, de crevettes pêches (bisque et huile d'herbes), de coquilles Saint-Jacques (betterave) et de homard (vinaigrette à la mangue), une introduction légère et éclatante. Ce qui était particulièrement intéressant était le "Caviar Redefined". On pouvait déguster trois types de caviar : Kristal, Baerii et Osietre Gros Grain, en comparant la taille des grains, la couleur et les saveurs, et j'ai été surpris de voir à quel point le même caviar pouvait avoir des expressions si différentes. C'est un plat qui illustre bien la philosophie du restaurant de "réinterpréter la tradition avec un regard moderne".
Le Deuxième Mouvement a présenté un poisson (bouillon de champignons et truffe), du magret de canard, et du faux-filet de boeuf coréen (sabayonne aux agrumes et tomate), offrant un développement plus riche et profond. Après la finale avec une fève tonka, l'encore a inclus des cannelés, des choux au café, de la gelée de mandarine, ainsi que du thé et du café, sans aucune faille jusqu'à la fin.
Le service était professionnel, laissant une impression comme après avoir assisté à un concert. Bien que ce restaurant soit difficile à réserver, cela en vaut vraiment la peine. Je le recommande chaleureusement pour un anniversaire ou un repas spécial à Séoul.
