A New Breeze in Kyoto Yakitori

"Wabiya" is a yakitori restaurant operated by the famous Kyoto patisserie Marubranche, where locally sourced chicken and vegetables are carefully cooked over wood and charcoal. This shop quietly stands deep in the alley, and I feel excited even before entering. The style is centered around a counter that surrounds the grilling area, and the live experience of using both charcoal and firewood is fantastic. They handle Kyoto chicken and Kyoto vegetables with care, enhancing their aroma and flavor significantly. The skewers grilled over charcoal are fragrant and juicy, while the vegetables grilled over firewood have a delightful, fluffy aroma. The chicken thigh, neck meat, liver, green onion and onion, and chicken breast with plum and shiso are all unique, making it hard to stop eating. The flow of enjoying the appetizer of tomato soup, followed by steamed chicken with egg yolk and condiments, and finishing with noodles is surprising and very satisfying.
