■ Nakasho Shoten, a long-established wholesale dealer with over 90 years of history, is well-versed in selecting unagi. With years of experience and a track record of supplying many famous unagi restaurants, as well as operating its own restaurant, we are confident in our choice of ingredients. ■ The storage facility, known as Tateba, has been inherited from the past to preserve the quality of unagi. The unagi, which has been purged of mud using well water, is sourced from 200 meters underground to eliminate its unique odor. ■ The grilled Nakasho unagi is cooked without steaming, using high heat for a short time. This method traps the umami inside, resulting in a crispy and fragrant exterior while keeping the inside fluffy and juicy. Enjoy the delicate craftsmanship. ■ The sauce, Nakasho's secret sauce, has been continuously replenished since our founding and is used to coat the freshly grilled unagi. It creates an exceptional flavor where the fat and umami of the unagi blend together.
