A renowned Shinshu soba restaurant with a historic charm

Nagase is a famous Shinshu soba restaurant that blends seamlessly into the tranquil atmosphere of Takayama. The establishment exudes the traditional charm of an old-fashioned soba shop, providing a comforting sense of relaxation to its visitors. The hand-made mori soba is characterized by its rich flavor and fragrant aroma. The particularly thick and smooth soba broth is unforgettable once you taste it.

The thin noodles have a firm texture and are very delicious. The dipping sauce is good, but it's fun to eat with salt or wasabi that contains mekabu. The tempura has a crispy batter, and the enoki mushrooms and large shrimp leave a lasting impression. The thick soba broth is rich and has a taste that makes you want to drink it again and again. They carefully teach you how to enjoy the noodles and the soba broth, so you can relax and enjoy your meal. It's also easy to get to from the station, and you can spend a leisurely time in the calm, small interior of the restaurant.
