A New Star of Karuizawa Terroir Crafted by Firewood

Opened in July 2024, MANO is a counter-only restaurant where Chef Ryuichi Nishimoto showcases his skills honed in Spain with firewood cooking. The chef personally forages for mushrooms and local vegetables, enveloping them in the aroma of firewood, and offers a delightful experience with traditional paella that highlights the art of cooking. Each dish is complemented by house-made non-alcoholic drinks that enhance the flavors, allowing guests to experience the essence of the land through all five senses. Come and experience the harmony created by firewood and ingredients.
