I was excited the moment I opened the door to a calm building that felt like a secret base. The space with the flickering fire in the fireplace felt like a resort, and it was very relaxing. During the day, they serve a one-plate set meal, carefully arranged with items like fried pork from free-range black pigs and bonito grilled with straw, all of which had rich aromas. The vegetables, such as Koshihikari rice from their own farm, komatsuna kimchi, and simmered daikon, were fresh, and with every bite, you could feel the care of the makers. When I tried a bit of natural wine, it was not only gentle on the body but also had a complex flavor that paired perfectly with the food. The staff enthusiastically explained the dishes and wines, making for a fun and happy dining experience throughout.

Mr. Tada from Bon Dabon, who trained at a long-established place in Italy known for Parma ham and earned the title of craftsman, currently makes the prosciutto 'Pershu' in Seki City, Gifu Prefecture. *Pershu: A local dialect term affectionately used by craftsmen to refer to Parma ham. No food additives are used; only meat and salt are employed, and pride in experience and technique is maintained. It is aged for about 24 months, with a salt balance tailored to Japanese tastes. A single bite releases a rich aroma and gentle umami.
