The restaurant is tucked away in a quiet residential area in Akita City, Akita Prefecture. The owner, Hiroki Takamura, is a valuable inheritor of Edo cuisine, having trained at the famous restaurant "Takohachi" in Mejiro. His dishes are popular for their time-consuming and careful preparation, meticulous attention to detail, and use of the original flavors of the ingredients.

It is completely referral-based and was this year's OAD Ranked 37th on the list. A seriously, seriously bad restaurant, Takamura. Overlaid on Takamura's complete reservation system A fantastic gem that requires complete advance reservations, I talk about Hinai Jidori chicken neck skin roast. When closing Hinai Jidori chicken, the skin of the neck is usually cut with a blade a blade is used to cut into the neck skin. a small hole is made in the neck skin so that the skin remains a small hole in the neck skin so that the skin remains in a cylindrical shape. Of course, only one piece of neck skin of course, one piece of neck skin from each bird. This is a tireless corporate effort to make it affordable for our customers. We negotiate the cost to make it accessible to our customers, This is a masterpiece that is specially offered to customers. Hinai Jidori chicken is served in the neck skin minced and filled with parts of the chicken other than the organs minced and stuffed into the neck skin. Charcoal fire is set on a charcoal grill, Mr. Takamura slowly and carefully Mr. Takamura takes his time and finishes the dish carefully. I just wait and wait and wait...! Not crispy, Not crispy, without the neck skin bursting at the end ultimately savory and moist. The mysterious baking condition is truly divine. Finally baked! Hinai Jidori chicken neck skin grilled. Cut into round slices and serve on a plate. Wow! This...!" Hey, are you sure? It's coming out like this! The juices are coming out! from the cross section! The gravy is a Niagara waterfall! I don't know if I can put this in my mouth... I don't know if it's okay to put it in my mouth... No, it's absolutely delicious.... It's like something from Spirited Away. The father was eating... "Like the yum cha? It's like that. I said unintentionally. Then, Mr. Takamura said, What? Really? You're the first person to say that to me. You're the first!" Well, I'm from the generation of "Spirited Away! It's so realistic! Just before I throw it in my mouth, The aroma of charcoal wafts through the air. Mmmm..! Umami.... The best. The flavor of Hinai Jidori chicken spreads in your mouth and the moist, yet fragrant, and just the right amount of of the exquisite neck skin that is moist, yet fragrant and crispy. an impressive matching that exceeds the imagination. No other matching app in this century has achieved in the past century. The aroma of Hinai Jidori chicken is also great. I could eat this every day. So you go there every day? Don't be absurd. Food lovers and celebrities from all over the country and celebrities from all over the country, and celebrities from all over the country It's a restaurant that you can't help but agree with. I hope you will follow my introduction and and go there. You really must make a reservation for the neck skin roast in advance. You really need to make a reservation in advance.

[Last night, we had a special Western Cuisine & Suppon no Kai at Restraunt TAKAMURA.... We had a special Western Cuisine & Suppon party at Restraunt TAKAMURA ‼️ (Mr. Takamura was kind enough to do it even though he said he didn't want to do it because it takes time to prepare! ) We were so impressed with the "drinkable menchis" we were served at the party that we were surprised that Mr. Takamura could even make Western-style dishes. I was so impressed by the "drinkable menchi-" as it is commonly called that we were all very excited! We were all so excited that we were saying, "What? "Mr. Takamura, you can even make Western food? I want to eat this every time I go to the restaurant! I want to eat this every time! I want to eat this every time! I want to eat Neapolitan. I want omelette rice. I want omelette." "I had oden this time, so I didn't get the Hinai Jidori chicken wrapped in neck skin, so next time I'll make sure to get it! I have to try the suppon, too!" Mr. Takamura, at first he seemed to be having a hard time saying yes, but eventually he got into the swing of things 🤣 (forced?). (Forced? Laughs) Hats off to his good mood and light footwork. 🙇‍♂️ By the way, since you are doing this for us, we are serious about it too! So we also reupholstered the sign! LOL! Do you know what this design is based on? They even got a designer involved 😁. All the highlights of this dish! I'd like to say "Suri-ryu", but I can only say "suri-ryu".... While there are several dishes that are representative of Mr. Takamura's cuisine, this is a dish that really conveys the delicacy of his sense of taste, or rather "Goshoku". Incidentally, as a carbohydrate lover myself, the combination of Neapolitan and beer at the end was just too good 😋. So much so that the words "great, so delicious" leaked out unconsciously 🍺. This time I felt "before Takamura" and "Takamura-ness" more strongly than ever! Panzone mixed with green laver, homemade truffle salt, homemade chicken ham Undan with shell, prawns and scampi roe in jelly, Vestel caviar Steamed rock oysters with sake Akita corn, edamame and water shield greens with grated radish Carpaccio of live octopus and starry flounder Hinai chicken wrapped in neck skin Charred Hoggett from Lamb Sunrise with Inca Awakening Mashed Potatoes Amela tomatoes, burrata cheese, sesame sauce Suppon Hot Pot with Leek Drinkable Mince Cutlet with Truffle Sauce Anzu Squidfish and Abalone Butter Black Omelette Neapolitan Neapolitan from Cafe Takamura Eggplant pie with frozen bunches of cheinmuscat It was a fun night in Akita Omachi, not to mention delicious 😆. Thank you very much to Ms. Takamura, Ms. Megumi and Ms. Noriko for all the wonderful dishes and for being so accommodating until the day of the event. 🙇‍♂️
