Il proprietario Sakita è un professionista che ha approfondito la sua comprensione del pesce dopo aver completato un tirocinio in un ristorante di sushi e aver accumulato esperienza in un mercato ittico all'ingrosso di Tsukiji. Gli ingredienti freschi e di stagione selezionati da Sakita vengono elevati a nuove vette grazie a una cottura ottimale. Nonostante si trovi lontano dal centro, è un ristorante amato da molti buongustai.
