In the quiet atmosphere of the alley, the white walls and black counter stand out beautifully. You can see the craftsman's hands over the counter, and I can't help but be captivated by the beauty of their movements. The first tea served is fragrant, and it's enjoyable to watch it being carefully prepared right in front of me. The dishes with a rich dashi convey the umami of the ingredients directly, and you can feel the attention to detail in every aspect. The crab miso hot pot and the beef simmered in grated daikon particularly left a lasting impression, and they paired perfectly with spinach and mushrooms. The rice is cooked to perfection, and the egg over rice, topped with freshly shaved bonito flakes, is aromatic and satisfying until the very end.
