The style is characterized by eating only with homemade dashi carefully prepared from scratch, without using ponzu or sesame sauce. The Okinawa-native Agu pork is well-marbled, with sweetness and savory flavor in the fat, and because the fat’s melting point is lower than that of ordinary pork, it offers a melt-in-your-mouth texture. Combined with a mountain of shredded cabbage, Okinawa-grown mozuku seaweed, island tofu, and kuruma-fu (wheat gluten), the meal is finished with zosui (rice porridge) or Okinawa soba made with the dashi in which the umami has been concentrated.

Located right next to Moon Beach, along Route 58, it features sunken kotatsu-style tatami seating that makes it easy for large groups to use. The sunken kotatsu seats alone accommodate up to 28 people, and combined with table seats up to 38 people; private reservations are also available. The roomy tatami seating with plenty of legroom is popular with families with children, making it an open, relaxed space that blends into the resort evenings — suitable for everything from family trips to anniversary dinners.

Opened its first store in April 2019 in Yomitan Village, Okinawa Prefecture, and, following its positive reception, opened a second store on July 4, 2020 in Onna Village. Since then it has continued expanding across Okinawa—to Ishigaki, Kokusai Street, Churaumi, Naha, Onna Manza and other locations—and has grown into a brand operating eight stores in Okinawa. The Onna Village store is in a prime location near Moon Beach and has been loved by both tourists and local customers.
