This brewery, Nishi Shuzo, was the catalyst for the shochu boom. 【Commitment】All the sweet potatoes used as ingredients are sourced from local contracted farmers who adhere to the belief that 'delicious shochu is made together by the brewery staff and farmers,' using fresh sweet potatoes grown without pesticides and with organic fertilizers. Among them are some rare and hard-to-obtain premium shochus. The shochu he creates is born from a playful spirit, and he is always passionately engaged in the craft of shochu making.

A recommended product from a brewery that has created a variety of shochu bursting with individuality, breaking the concept of sweet potato shochu. Made with black koji. The production method is traditional, using ceramic pots, and the selected sweet potatoes are processed on the same day they are harvested. It is traditionally made without filtration or adjustment. Even when diluted with hot water, the flavor does not diminish. The aroma that tickles the nose rises with the steam from the glass, and the finish is superbly crisp. The production is limited to about 200 koku, and it is released in about 15 stores outside the prefecture. Only minimal filtration is done, and impurities are carefully removed by hand, resulting in a slight 'cloudiness,' but it allows for a rich and pure taste of sweet potato with very few off-flavors.
