Chuka Soba is characterized by firm thin noodles boiled al dente to create a unique texture. We are particular about using no chemical seasonings, and our chicken broth soup, made by steeping dried ingredients in water and adding wood vinegar from the day before, is cooked slowly over time. The combination of this soup and the thin noodles from Chengdu is excellent, and many customers come back for more.
Teigaku's ultra-thin noodles made from 100% domestic wheat, using homemade kombu water made in the shop. The broth is made by aging four types of precious soy sauce and aromatic vegetables with Hokkaido kombu. Since no chemical seasonings are used, the saltiness comes out strongly in the flavor. Therefore, even with less salt compared to ramen made with chemical seasonings, it has a solid taste. A special sauce-upgraded 'extra noodles' is provided for free to customers ordering dipping noodles.
