Our Three Core Principles of Umami ① Commitment to Ultra-Soft Water (Hardness 0) Ultra-soft water extracts umami quickly and cleanly, preventing any unwanted bitterness or unpleasant flavors. This pure, clear broth is a vital element in our pursuit of perfect umami. ② Commitment to Temperature The perception of umami changes depending on the temperature and condition of the ingredients. We carefully control temperature to ensure that each ingredient is experienced at its optimal state. ③ Commitment to Texture The moment an ingredient touches the tongue is its "first impression," profoundly influencing taste perception. We meticulously adjust moisture levels and knife techniques to enhance texture, ensuring that each bite conveys the essence of the ingredient. Our Name: "Niebana" The name Niebana refers to the fleeting moment when rice becomes edible just before fully cooking. Like Niebana, we continue to refine our craft, striving to elevate flavors and create unforgettable dining experiences. Our goal is to enrich every special moment for our guests with our dedication to umami. Reservations & Cancellation Policy Regarding Children We welcome children who can enjoy our full Omakase Course from start to finish. Please refrain from wearing perfume when visiting. This is to ensure that the delicate flavors of our sushi are not overwhelmed by strong fragrances. We aim to create an experience where every bite is pure and untainted, allowing you to fully appreciate the umami of our dishes. Private Reservations For private bookings of eight guests, we offer flexible scheduling. Please indicate your request when making a reservation. Late Arrivals If you are more than 30 minutes late without prior notice, we may have to cancel your reservation. Please inform us in advance if you anticipate a delay. Cancellation Policy To provide the best dining experience, we carefully select premium ingredients for our limited 8-seat restaurant. If you need to cancel or adjust the number of guests, kindly notify us as early as possible. Cancellation fees: One day before: 50% of the reservation amount Same day / No-show: 100% of the reservation amount 30+ minutes late without notice: Treated as a cancellation, and fees will apply When making a reservation, we ask for your credit card information to hold a deposit. The deposit will be refunded after your visit. Payment has not been completed yet, so please make your payment when you arrive at the restaurant. Our restaurant is located on the 1st floor of the “New Keiwa Building.” Please enter through the entrance to the left of Seicomart, and you will find a small sign for “Sushi Niebana” immediately on your left. This is an omakase course of about 11 nigiri (rice ball) dishes with 5~7 items of exquisite dishes. Our course is prepared based on seasonal ingredients, facing the procurement of the day, and determining the best condition of the ingredients. The contents are all left up to you. Each time you visit us, you will enjoy the flavors that are unique to that season and that day.

Omakase Course

The strong 'hard' flavor that leaves an immediate impression is impactful, yet it is drawn out at a delicate timing to avoid being too overwhelming. The gentle 'soft' flavor seeps into the body slowly over a long period of time, accompanied by dashi. The key to 'Shichochou' at Sushi Nieba is 'in the water.' The concentrated 'hard' flavor adjusted to the material's water content and the clear dashi aroma from ultra-soft water with a hardness of 0 enhance the 'soft' flavor. Please enjoy various flavors with seasonal ingredients.
