A French washed cheese with a resilient texture. It is characterized by a mild yet rich flavor. Our cheese professionals wrap it in gauze soaked in grappa for aging, as the outer skin tends to harden during normal aging. This process softens the outer skin, making the inside chewy and easier to eat. You can also enjoy the subtle aroma of grappa.
