Our pho is made in the style of Ho Chi Minh (Saigon Pho), using beef bone broth that has been carefully extracted over two days and thick, chewy homemade noodles that faithfully replicate local methods. Additionally, we serve rare herbs in Japan as a condiment, so feel free to tear them into small pieces and add them to your pho as you like.
In Vietnam, herbs and fresh vegetables are commonly eaten. Inspired by that, this is a spicy pho centered around vegetables, rich in dietary fiber, and offers various textures to enjoy. The ingredients include boiled chicken, mizuna, cilantro, treviso, daikon, white onion, green onion, hoary basil, sawtooth coriander, lime, and red chili pepper.
This is a rich and spicy pho (slightly spicy) made with coconut milk. It includes various ingredients such as shrimp, bamboo shoots, onions, bean sprouts, radicchio, cilantro, red chili peppers, and nuts (almonds, cashews) in an ethnic style.
Many of the pho known in Japan is Hanoi style. This is the original pho from PHO' MINH Shimokitazawa in Hanoi style. It is a casual style that includes stir-fried beef, cilantro, green onions, scallions, onions, and lime.
