The rich, creamy tonkotsu-based soup is not heavy, and a subtle scent of the sea lingers on the palate. The straight noodles hold the soup well, providing a pleasant slurping experience. When you dissolve the spicy miso on the chashu, the flavor changes, making it enjoyable. The char-grilled chashu itself is delicious and satisfying. This bowl does not use any chemical seasonings, allowing the gentle umami to come through clearly. From the calm space of a renovated old house, you can view the mountain range, and the service is unobtrusively pleasant.
