The pure rice sake 'Eiichi', named after the first head, features a deep flavor brewed with the underground water of the Nagara River and 'Hida Homare' from Gifu Prefecture. Additionally, enjoy local Japanese sake such as the dry and refreshing honjozo 'Misenmori (Gifu, Kasahara)' and the elegant pure rice sake 'Reisen (Gifu, Yoro)' made with Yamadanishiki, along with carefully selected bottles from all over the country. We also offer a variety of shochu, beer, and highballs.
The simple question of 'What wine goes well with sushi?' led the study-loving chef to attend a wine school, wanting to learn from the basics. As a result, he concluded that 'wines with acidity and saltiness' and 'wines with a clean taste' are the best, and he focuses on 'wines grown in cool regions' rather than specific regions, always preparing about 20 bottles. After training at sushi restaurants in Ichinomiya and Nagoya since 1958, I opened Sakae Sushi (now Rakuzan) in 1969. In November 1997, a young master who had trained for eight years at a Japanese kaiseki restaurant in Gifu Prefecture joined us, and we renamed the restaurant to Rakuzan. While I have served as the head of the Ichinomiya branch of the Aichi Prefecture Sushi Merchant Sanitation Association, the young master has served as the vice head of the youth division. In addition to sushi, we also offer creative Japanese cuisine in a kaiseki style, so please feel free to use us for a variety of occasions.
The fish is carefully selected, starting with the line-caught tuna from Oma, and all are natural products. The rice is a blend of Koshihikari and Hatsu Shimo from Gifu Prefecture, using traditional red vinegar. The so-called 'gyoku,' which is also a key supporting ingredient, uses eggs from 'Bokka' raised free-range in Sobue Town, Inazawa City, Aichi Prefecture. It is rich in flavor and umami, and above all, safe. Furthermore, the salt is from Wajima, Ishikawa, the pepper is organic black pepper from Cambodia, the oil is locally pressed rapeseed oil from Nishio, Aichi Prefecture, and the wasabi is from Yuto, Shizuoka. The nori has a subtle ocean aroma and is from Toshi Island in Mie Prefecture, known for remaining crispy and delicious over time. The dashi used in the soup is made solely from line-caught bonito from Makurazaki. Since it is not caught in nets, it remains undamaged, and the absence of lactic acid results in a clear taste. Both the main and supporting ingredients are all focused on pursuing deliciousness. Please enjoy every bit of it.
What has been passed down from the first generation is not just the 'heart and skill' for cooking. It is the home garden. Located about 15 minutes by car from the store, along the banks of the Kiso River. The area is approximately 70 square meters, and due to being designated as a farming area, it features healthy soil. All vegetables are grown without pesticides, but true to the first generation's words, 'Since we are not professionals, let's keep it relaxed,' we incorporate whatever is thriving at that time into our cooking and sushi. In spring, we have onions; in summer, cucumbers, tomatoes, and shishito peppers. In winter, various leafy vegetables such as radishes, Chinese cabbage, and broccoli. One of the charms of 'Rakusan' is being able to enjoy vegetables that have been grown gently and with plenty of love.
