Using 50% Yamada Nishiki rice, with a sake meter value of +3 and an acidity of 1.3, this luxurious sake is made only from the middle pressing. It is finished as a refreshing sake with a crisp aftertaste.

Despite being an unfiltered nama genshu, it has a low alcohol content of 11 degrees. This is a new sake that doesn't feel like traditional sake!
Local sake from Higashimurayama, Tokyo. It is read as 'Okunokami'. This sake is a bottled version from the 22nd brewing year. 'Unfiltered' means it is unfiltered and undiluted. Compared to the middle-grade junmai sake, it has a gentle ginjo aroma and a pleasant, soft mouthfeel.
This is a recommended bottle from Kobe, Hyogo! Kosen Junmai Ginjo Nama Genshu bursts with a fresh sensation that fills your mouth, followed by a strong umami that comes later. It's a finish that can be said to have no one who dislikes it!
The sake rice is the unique 'Nishito no Shizuku' from Yamaguchi Prefecture, which has a faint sweet aroma and pairs excellently with elegant umami dishes. This is a precious bottle that is carefully brewed with local rice and water, and is rarely found outside the prefecture!
Using Gohyakumangoku rice from Okuetsu, it has a clear taste that you won't tire of. If I were to compare it to a woman, it would be like a slender beauty with fair skin. It enters smoothly without any off-flavors.
Using rice Hana Fubuki with a polishing ratio of 55%, this unfiltered nama genshu is carefully pressed at low pressure. It has a gorgeous aroma, rich sweetness, and depth. It is truly fresh, the very first sake from the brewery!!
Using 55% polished rice of our own cultivated 'Sanshu Ooseto' as the raw material. Upon tasting, a rich umami and flavors reminiscent of koji spread out, along with the deliciousness of fully ripened ingredients. After a sufficient aging period, a truly mellow umami characterized by a combination of 'softness' and 'gentleness' is added to its strength. This is a limited direct-drawn bottle!
This is Gembu Special Junmai sake brewed with Yamada Nishiki rice. Upon tasting, a radiant aroma spreads, accompanied by flavors reminiscent of kumquat and a sweet and sour taste. As the temperature rises slightly, the sweetness becomes gentler and increases. The sweet and sour citrus flavor combined with the sparkling aroma makes this a wonderful aromatic sake!
This is a junmai unfiltered nama sake made using the popular Kitajima series rice variety, Nihonbare. It has a distinctly junmai mouthfeel and a powerful umami that hits you hard, along with a solidly dry finish!
Freshly pressed, it has a refreshing aroma of ramune, lime, and sweet rice, among others. The fermentation gas is still sufficiently present, creating a delightful effervescence that tickles the tip of the tongue.
Please ask the staff on that day; we might be able to offer it quietly for 800 to 1,200 yen.
