Kawasaki Winery is a small handmade winery in Yamanashi that was discovered by the owner on-site. It is a very homey winery, but it has been in operation for over 100 years. When the quantity of grapes is low, they still use the tools from the founding days to make wine by hand, showing their deep affection for winemaking. This wine is a blend of Merlot and Harmo noir, aged in oak barrels. It has a moderate oak aroma combined with the fragrance of Merlot, enhanced by the flavor of Harmo noir, resulting in a flavorful wine. It was born in Yamanashi as a hybrid of Cabernet Sauvignon and Zweigeltrebe, and is a registered variety under the Plant Variety Protection Act (PVP) for wine grapes. While it has a noticeable aroma and flavor, the cultivation quantity is still limited, so this time we aged it in barrels with Merlot to explore the compatibility with oak.
Different vineyards and ripeness levels of Merlot and Whole Bunch Cabernet Franc were fermented separately, and the resulting wines were blended and aged in a single barrel of heavily roasted oak. The blend consists of 80% Merlot and 20% Cabernet Franc. We also hoped for the complexity that does not arise from a single variety. This wine has shown various characteristics during its aging process in the barrel, and I feel the difficulty of timing the bottling after it is taken out of the barrel. I was concerned that the strong roast from the new barrel might overpower the wine, but the current profile is calm. I have a feeling that after resting a bit more in the bottle, the aroma of the grapes will start to open up. In contrast to the elegant Merlot Harmo noir, this wine has a finish that feels thick, tannic, and has a masculine weight.
A cider made from 100% Tsugaru apples produced in Yamagata Village, Nagano Prefecture, featuring a fruity aroma and a moderate sweetness that harmonizes well. It pairs well with any dish, whether Japanese or Western, including meat and fish.
