Among Japanese black Wagyu beef, the freshest "fresh tongue" that has never been frozen is aged for 30 days to condense the flavor. Only about 300 grams of the "tongue core," a rare part of the highest quality tongue, is used to create an exquisite dish that cannot be found anywhere else.
Using the premium shiitake 'Tenkeiko' born in Tokushima. The 'Tenkeiko', born from nutrient-rich mycelium and optimal conditions, contains three times the umami of typical shiitake, making it very rich and fragrant, characterized by a clear taste without any off-flavors.
