In CARVAAN's in-house cooking, we use naturally derived ingredients and do not use chemical seasonings. We use natural rock salt and sea salt for seasoning, and instead of white sugar for sweetness, we use palm flower nectar and agave syrup.

Unique grapes grow here, and the world's oldest winemaking method was born. By burying large clay vessels (qvevri) underground, a constant temperature is maintained, and the egg shape promotes the fermentation and aging process, allowing various components such as skins, stems, and seeds that settle at the bottom to impart rich flavors to the wine. This unique method results in a white wine that has an amber hue, which is why it is called 'amber wine' or 'orange wine.' The ancient qvevri method is still passed down in Georgia today.

Kvevri method / White / Dry Kisi Alc: 13.0% Hand-picked, hand-sorted, amber wine (orange wine) made using the traditional Georgian kvevri method. The skins and seeds were soaked together for 6 months. It has a faint aroma of French marigold and peach, with a long finish that reveals notes of apple skin and black tea. bottle
White / Dry Rkatsiteli Mtsvane Alc: 13.3% A representative indigenous white wine variety of Georgia, centered around Rkatsiteli, brewed using the 'maceration method' to create an amber wine (orange wine). The traditional and innovative method, which involves steeping the skins and seeds with the juice in a strictly temperature-controlled stainless steel tank for over 5 months without using qvevri, results in soft tannins and a pleasant aftertaste. It features delicate aromas of fresh quince and dried fruits.
Kisi, Mtsvane Alc. 13.0% Qvevri method / White / A dry wine with herbal aromas of Mtsvane and the scent of ripe pear and peach characteristic of Kisi. An amber Qvevri wine that brings out the fresh fruit acidity and freshness of two types of Georgian indigenous white grape varieties.
<Red/Full-bodied> Saperavi Alc: 14.5% This wine is made from the indigenous grape variety Saperavi, which represents Georgia, fermented in stainless steel tanks under strict temperature control. The lively tannins and refreshing acidity are harmoniously complemented by subtle notes of cherry, plum, and black pepper. Enjoy the characteristic long finish of Saperavi. bottle
<Qvevri Method/Red/Full Body> Saperavi Alc: 14.0% Hand-harvested indigenous variety Saperavi was brewed using the traditional Qvevri method from the Kakheti region. It has a deep garnet color with aromas of ripe cherries and plums lingering in a long finish, and the rich flavor with expressive tannins is truly a result of the Qvevri method. bottle
<Rosé/Mid-dry> Saperavi Alc: 12.5% This smooth rosé wine, made from the indigenous red grape variety 'Saperavi' that represents Georgia, has an impressive beautiful rose color reminiscent of deep crimson petals. It pairs well when well chilled as an aperitif and also complements sweet desserts.
It has the most suitable soil and rain for wine in the world. The Bekaa Valley, located near the western border of Lebanon and Syria, is hot in summer and experiences three months of snow in winter. The soil consists of limestone and red clay from the Cretaceous strata, which brings out the spicy flavors of Cabernet and Syrah. It is said that since ancient times, the high-quality wines produced by the Phoenicians in the Bekaa Valley were also enjoyed in Greece and Rome.

A micro-winery that revives ancestral grape lands and agricultural methods, exploring biodynamic farming. It is a pioneer of biodynamic farming in Lebanon, respecting and maintaining the natural balance of the land through a wonderful combination of sun, soil, air, and water. Believing in the importance of Lebanon's excellent indigenous varieties Obeideh and Merweh, it is the first winery in Lebanon to produce wine solely from these grapes. The winery uses indigenous yeasts in the fermentation process, expressing the land's personality by maximizing the flavors and aromas created by Lebanon's excellent ancient terroir.
<White/Dry> Obeideh Alc. 12.5% The white grape Obeideh, which has been used for a long time in the Arab distilled spirit Arak, is a native variety representative of Lebanon. It has elegant aromas of white flowers, jasmine that blooms at night, and honeysuckle, and when tasted, one can feel fresh citrus, bitter almond, and hints of honey.
<Skin Contact / White / Dry> Obeideh Alc. 12.5% A rare orange wine made from the indigenous Lebanese white grape Obeideh, crafted by Sept Winery. The wine, which is fermented for 12 months with the juice, fruit skins, seeds, and stems, has an elegant taste with a rich structure. bottle
<White/Dry> Merweh Alc. 12.5% A secret garden that accidentally discovered the land where the indigenous grape Merweh, said to be extinct, was growing in the pine forest. There exists a 100-year-old ancient Merweh tree. This wine, made from the rare indigenous variety Merweh harvested from vines that have existed since before phylloxera, expresses Lebanon's lost wine culture. It evokes the taste of fruits reminiscent of long summer days under the sun of the Lebanon mountains, with an astonishing mineral sensation, and a harmonious balance of oriental flavors such as tamarind, rose water, and quince, leaving a long aftertaste. bottle

The aromas of strawberry and plum from the Tempranillo blend with the concentrated scents of blackberry and cassis from the Cabernet Sauvignon, resulting in elegant, mellow tannins and a smooth texture on the palate. bottle
Ancient Greek winemaking was introduced by the Phoenicians from the Orient around 2000 BC. Many stories related to wine and grapes appear in Greek mythology and literary works. The ancient Greeks worshipped a god called Dionysus (Bacchus) as the god of wine and the abundance of grapes, and it is said that Dionysus spread winemaking throughout various regions. Greece is said to have around 300 indigenous grape varieties, and the production of unique and attractive wines continues in various places.
A winery on the hills of Epanomi overlooking Mount Olympus, where it is said the gods have lived since ancient times. The vineyards in this beautiful rural town with a population of about 9,000 are also a treasure trove of rich ecosystems and wild birds. Surrounded by the sea on three sides, the sea breeze gives the fruits acidity, resulting in fresh-tasting wine. The dedicated winemakers carefully tend to the grapes, producing high-quality wines that reflect the characteristics of this terroir by harmonizing tradition and technique.

< Red / Full-bodied > Limnio, Mavroudi, Mavrotragano Alc: 14.0% A sweet and rich flavor blended from three indigenous Greek red grape varieties. It has complex aromas of ripe berries, cherries, raisins, and floral cocoa, with gentle tannins, making it a powerful yet delicate and supple red wine. The main grape in the blend, Limnio, is one of the oldest Greek grape varieties, mentioned by the playwright Aristophanes in the 5th century BC as the grapes of Lemnos Island. Mavroudi is said to be the legendary variety that the hero Odysseus from Greek mythology used to intoxicate the giant Polyphemus. bottle
Idaia Winery, located in Daphne on the island of Crete. Idaia is the first name given to Crete, the island where the sky god Zeus was born. Crete, located at the southern tip of Greece, is the land where the oldest Minoan civilization in Europe arose. It flourished through Mediterranean trade, and around 2000 BC, winemaking was introduced by the Phoenicians. The island of Crete enjoys long hours of sunshine, with over 300 days of clear weather each year, making it a land blessed by the sun. On the gently sloping south-facing hills, a cool sea breeze known as Meltemi blows, resulting in wines with delicate acidity that one would not expect from a southern island.

It offers a fresh fruit flavor and mineral sensation typical of expressive Mediterranean wines, with a refreshing acidity and a clean mouthfeel that provides a spicy aftertaste. bottle

<Red/Full Body> Carignan, Syrah, Cabernet Sauvignon Alc: 13.0% During the ancient Carthaginian era, which flourished as a kingdom of the sea, winemaking was introduced to Europe through the 'Magon's Agricultural Book' written by Magon, the father of agronomy and viticulture. This wine, named after Magon, has a rich flavor aged for one year in French oak barrels and features sweet aromas of prunes and raisins. bottle

This red wine, blended from the indigenous varieties Boğazkere and Öküzgözü from Southeast Anatolia, where people still speak the words of Christ and are considered descendants of the Assyrians, has a rich flavor of matured berry fruit. Alc: 45.0% Long ago, three wise men set out from the far east, guided by the stars, to search for the coming savior, bringing gifts with them. The gifts were gold, frankincense, and myrrh. Karlvan Distillery extracted aromas from frankincense, myrrh, juniper berries, and lemon myrtle to create an original gin based on this story.

Alc: 45.0% "A distilled spirit that reflects history and exudes culture, extracted from the aroma of frankincense." Frankincense is a resin that seeps from the bark of the frankincense tree and solidifies into milky-white droplet-like lumps when exposed to air (the Arabic name is Al Lubaan). In ancient times, it was highly valued in ancient Mesopotamia, ancient Egypt, and ancient Persia, and the intense longing of people for frankincense led to the creation of frankincense trade, which has been passed down as the "Frankincense Route." The ruins that convey the state of affairs at that time are registered as a World Heritage Site known as the "Land of Frankincense."
