Joy White is brewed in a clay pot, and the original sake is stored and aged in the clay pot for several years. It has a smooth yet sharp finish, with a refreshing aftertaste.

At Apuchako, we are particular about our broth. We use high-quality kelp from Rausu, Hokkaido, and plenty of bonito flakes. As Mr. Hata from Tsuji Culinary Institute says, for fish stew the ratio is 5:1:1 and for vegetable stew it is 8:1:1, we faithfully create a broth with the golden ratio. Our hot pot broth is also incredibly delicious. No doubt about it.
