A classic stewed bay shell from Ishikawa Prefecture.
(Kaga Cucumber, Carrot, Young Corn) The vegetables are pickled with koji. They can be enjoyed lightly.
Ingredients marinated in koji are mixed into the potato salad. It is dressed with homemade mayonnaise made from soy milk and sweet sake. The saltiness of the pickled mackerel topping enhances the flavor.
The rich egg yolk sauce pairs well like custard. The color of the Kintoki greens jelly is vibrant.
