Our dishes use Matsukame Miso from Okaya City, Nagano Prefecture. It is a rich and aromatic miso made with Aizu soybeans called 'Ayakogane'.
Awarded the 25th Heisei All-Natto Association President's Prize (Large and Medium Bean Category) and the 24th Heisei Minister of Agriculture, Forestry and Fisheries Prize, Dōsojin Natto is made from a variety of soybean called 'Nakasennari' from Shinshu. It has larger beans and a strong soybean flavor.
Winner of the Governor's Award in the Kinu-goshi category at the 14th Nagano Prefecture Tofu Competition. This is the signature product of Tanauiya, made exclusively with 'Nakasen-nari' soybeans from Nagano Prefecture. It is produced by a tofu maker in Shinshu using water from Shinshu. Please be sure to try it at least once.
