Edomae Sushi with Red Vinegar Rice Shines in Shin-Fukushima
The popular Tokyo-based Sushi Dokoro Isseki Sancho has made its debut in Osaka, transformed from a traditional house into a warm space. Chef Sakaki, who hails from a Michelin-starred restaurant, showcases the entire process from cutting the rice to forming the nigiri right in front of you. The meticulous temperature control and knife skills used to combine red vinegar with rice cooked in a clay pot enhance the flavors of seasonal seafood to their fullest. Guests can enjoy a diverse array of offerings, including fragrant grilled dishes, rich red miso soup, and melt-in-your-mouth desserts, all of which pair excellently with sake.
