This is a signature dish that is an adaptation of the traditional Florentine dish 'Lampredotto' in the COSHIRAE style. It is recommended to enjoy the braised beef tripe, which is the fourth stomach of the cow, cooked with vegetables, served in a baguette just like in the original.
Grilled beef skirt steak is an exquisite dish that is slowly grilled for 30 minutes over binchotan charcoal. Cooked at high temperatures, the juicy medium-rare steak is tender and allows you to fully enjoy the flavor of the meat.
