Roasted AKAUSHI beef with red wine sauce. 'Akaushi' refers to the brown-haired Japanese cattle among the four types of wagyu, including the black-haired variety. It is said that 'Akaushi' allows for a stronger appreciation of the umami in the beef compared to black-haired cattle, and the balance of well-structured red meat and just the right amount of fat pairs excellently with Bordeaux wines. The distribution of 'Akaushi' is lower in Japan compared to black-haired wagyu. Our restaurant has established a partnership with suppliers from Kumamoto, the main production area, allowing us to provide it consistently. We prepare this rare and delicious 'Akaushi,' raised freely in the lush pastures of Aso, with exquisite cooking techniques. We invite you to enjoy it when you visit our restaurant.
