700 years ago, when Nara was called Yamato, during the late Kamakura period, the 'National Cattle Ten Illustrations' depicted fine cattle, already mentioning Yamato Beef as one of the countries producing quality cattle. Currently, 14 designated production farms are raising them with love in the blessed natural environment of Nara Prefecture. At Momoshiki, we source A4 grade female cattle from Nakao Farm in Nara City. Please enjoy the finely textured, tender meat quality and excellent flavor unique to female cattle.
First, warm the iron pot and add beef fat. If you heat it quickly over high heat, it can easily burn, so medium heat is just right.
Once the iron pot is heated, grill the meat on both sides. Pour in the dipping sauce, mix it with the meat, and it's ready. Enjoy it with egg.
Add vegetables and the sauce, and once it boils, reduce to low heat and add the remaining meat. Please maintain a quantity of sauce that occasionally reveals the pot's surface.
