This dish features 250g of shoulder-cut meat that is rich in fat, but has a sweetness that makes it particularly recommended for tonkatsu lovers. The better the quality of the pork, the tastier the fat!
Using a rare cut of rib roast and sirloin, specifically the marbled chateaubriand, which can only be taken from a limited number of pigs, weighing 220g. Despite being pork, the marbling allows for a melt-in-your-mouth texture in the center.
220g limited quantity original pork cutlet. The Sora roast cutlet is made by selecting the part of the pork loin with the highest moisture content, removing 90% of the fat, and using a special preparation method created by our chef to further lock in the meat juices.

Our signature clay pot rice cooked in a special clay pot, filled with five types of mushrooms and special Champignon duxelles, topped generously with black truffle. When you open the lid, a rich truffle aroma spreads. Serve it in a rice bowl, and enjoying it with tonkatsu on the rice brings happiness. Please order the tonkatsu as a separate item. It will take about 30 minutes to prepare as we cook it to match the frying of the tonkatsu. Additionally, if you order an appetizer together, we can serve it in a course style. It is also possible to serve the set that comes with the tonkatsu first.
The meal includes rice (large serving +110 yen), pork miso soup, mac potato salad, seasonal pickles, wasabi, and Japanese mustard sauce. A la carte is 220 yen off. If ordered a la carte, rice and pork miso soup are not included. Please settle the bill at each table. Please speak to the staff.

The grapes are cultivated by a couple living in northern Italy on just 10 hectares of land, all harvested by hand. This junmai sake is brewed with Yamada Nishiki rice from Hiroshima Prefecture, offering a gentle umami flavor and crisp acidity. It can be enjoyed chilled, where its sharpness can be appreciated, or warm, allowing for a broader range of temperatures to savor its taste.
The refreshing mouthfeel and light ginjo aroma come from low-temperature fermentation. It is a junmai ginjo sake that has been loved for many years without being flashy.
Junmai Daiginjo, fresh and fruity with a transparent umami. Gentle acidity and elegant sharpness express the snow melt. Awarded for delicious sake in a wine glass.
We will prepare the recommended [W] for that time. Priced from 900 yen to 1,200 yen, it is a refined drink with a fruity and subtle sweetness balanced by a pleasant acidity.
A sharp and clean sake made using Honjozo Tsurugoe soft water. It is the only hot sake served at our restaurant. It takes a little time, but we recommend it hot.
