The specialty duck shabu-shabu is a simple dish consisting of duck meat, leek, and duck tsukune. That is why we pursue this dish with the utmost care, from the single ingredient to the broth. Carefully selected duck meat is purchased directly from the producer, and sliced to order while maintaining its freshness for a soft and chewy texture. The leeks, selected from all over Japan, are cut 1.7 mm wide along the fibers to accentuate their crunchy texture. We hope you will enjoy the triplet of soft and flavorful duck meat, crispy leek, and natural broth from a soba noodle restaurant. The duck meat is served in a superb broth that is enriched with the flavor of the duck, sweetness of the leek, and richness of the homemade duck tsukune, and finish with freshly made juwari soba noodles and soba shabu.
The power of medicinal herbs such as octagonal, longan, hundred-herb, herbal and ginger herbs are expected to stimulate appetite, blood circulation, and digestion. Szechuan pepper, sansho, bean-paste, and other ingredients are mixed to create a deliciously spicy taste that does not stop.
