The salted bonito seared on glutinous rice straw from farmers, kombujime (white fish marinated in kelp), and red tuna marinated in homemade boiled-down soy sauce, all fresh and directly from fishermen in Saga! In addition to the vinegared kohada and plump conger eel grilled over Kishu-binchotan charcoal, we also offer nigirizushi with grilled shiitake mushrooms and negi and tuna negima soup....
