While typical carbonara is often made with bacon, authentic Roman carbonara uses salted pork cheek called 'guanciale', which allows for a richer meat flavor and aroma. The sauce does not use heavy cream but instead uses an egg mixture, and it is finished with shaved sheep cheese 'Pecorino Romano' and coarsely cracked pepper, providing a more intense taste compared to standard carbonara. You can choose between spaghetti or rigatoni (short pasta) as you prefer.
