To secure high-quality sake rice, we are particular about soil preparation and cultivate Yamada Nishiki locally ourselves. To convey the original flavor of sake rice, we have abolished the addition of brewing alcohol and practice the production of pure rice sake exclusively. The deep flavors that utilize the individuality of high-quality rice are expressed in all our sake, and while devising the polishing ratio and brewing methods, we challenge ourselves to create a diverse range of sake varieties, incorporating the delicate techniques of Toji Tabuchi in every sake.
To preserve the original flavor of the sake, it is unfiltered, and the heating process is minimized. The pressed sake is bottled directly without being stored in tanks to maintain quality, and it is aged in containers at -5°C. The brewing water is sourced from natural spring water from the Chinese mountains, known as 'Golden Well.' We strive to be a brewery that takes responsibility for the quality until the moment it is enjoyed.
Dewasakura, which has been producing ginjo sake for many years, was the first to sell 'Sakura Ginjo Sake' not only for competitions but also for the general public. Its fruity aroma and refreshing, rich flavor quickly gained high praise and became the catalyst for the ginjo sake boom. 'Sakura Ginjo Sake' has grown to become a representative of ginjo sake.
