The characteristic of Pizza Contemporanea is its airy and high-risen crust (cornicione). The ingredients are the same as traditional Neapolitan pizza: wheat, salt, water, and yeast, but by incorporating more air into the dough, the cornicione rises, resulting in a crispy surface and a moist, fluffy texture inside.
