This is a summer delicacy made from the roe of hamo (conger eel) that has been salted and aged. It pairs too well with sake, so please be careful not to drink too much.
When it comes to sweetfish, grilled with salt is the way to go. Ideally, I want to eat it by the riverside, not in a restaurant.
The sweetly cooked ayu, simmered for half a day, is tender enough to eat down to the bones.
Our Ayumesh is not grilled sweetfish, but rather sweetfish simmered in a sweet and savory sauce. You can eat the whole fish, including the bones.
