Utilizing a long-established supply route built over 10 years of training in Hokkaido, we offer a space where you can enjoy locally loved and consumed ingredients in Sangenjaya! The restaurant name 'Susukino' embodies the desire to bring the gourmet food of Hokkaido, represented by 'Susukino', directly to Sangenjaya. Our establishment specializes in 'Hokkaido Genghis Khan' using a cast iron pot and charcoal grill, focusing on three main ingredients enjoyed by locals in Hokkaido. ■ Ingredient 1: Icelandic Lamb - A rare ancient breed known as Icelandic Sheep, which makes up only 1% of the sheep imported to Japan, is a very rare and high-quality breed even in Sapporo Susukino. ■ Ingredient 2: Hokkaido Ezo Deer - Based on the belief that 'the cooking begins the moment you shoot', we manage all aspects of hunting methods, perfect bloodletting, butchering techniques, and preservation by hunters, and we also limit the age and gender of the Ezo deer for meat. This quality of Ezo deer meat is extremely rare and hard to find even in Hokkaido itself. It is an incredibly delicious ingredient that we want you to try at least once. ■ Ingredient 3: Seafood Directly from Hokkaido - When you think of Hokkaido, seafood comes to mind. The owner has extensive training in seafood izakayas and has unique supply routes for marine products. We are particular about the quality that we believe is truly delicious at any given time, sourcing directly from Hokkaido daily. We offer saltwater Ezo sea urchin without the use of alum, large-sized sweet shrimp, and live scallops, surf clams, and oysters in our tanks, providing the same freshness as in the local area. To match these Hokkaido-quality ingredients, the owner, who is a certified wine sommelier, will suggest various drink pairings. We would be happy to answer any questions you may have. From 5 PM to 9 PM, we focus on dining, but after that, we welcome bar use for drinks only. We also have counter seating, so we hope that even solo customers will feel free to use our establishment. The history of Icelandic sheep: Icelandic sheep are a 'pure breed' that the Vikings brought over in the Middle Ages. In the 9th to 10th centuries, sheep were introduced to Iceland by the Vikings. Since then, there has been no crossbreeding with other breeds, and strict lineage management within Icelandic sheep has been maintained, improving their quality. Due to disease and breeding concerns, the import of sheep to Iceland is still prohibited today. Therefore, the genetics of Icelandic sheep are the same as they were 1100 years ago. Icelandic sheep are known for preserving the 'oldest and purest breed of sheep.' Growing freely in Iceland's great nature: Icelandic sheep are raised in the wild, grazing freely. Lambs are born in May, and once they are able to go outside, they are allowed to graze freely. They run from mountains to valleys, sometimes crossing roads... enjoying the summer wilderness of Iceland. Icelandic sheep are characterized by their adventurous spirit compared to other breeds. They eat a variety of wild herbs, flowers, and berries, full of energy to live the short summer, and drink the rich and high-quality water of Iceland. During this time, they are not given artificial grains, feed, or hormones. They are raised solely on the natural blessings of Iceland. Only young sheep aged 4 to 5 months, which were just recently nursing lambs, are shipped as Icelandic lamb. The thorough management of lineage and quality, the vast nature of Iceland, and the fact that they are 4 to 5-month-old lambs contribute to the unique flavor of Icelandic lamb. Enjoy its delicate meat texture and sweet fat grilled over charcoal.

Ezo deer from Hokkaido are considered pests that cause significant damage to pastures, crops, and forestry due to bark stripping, and are targets for culling. They are not hunted for meat, so careful bleeding and processing are not always carried out, leading many to perceive deer meat as 'tough and not tasty.' However, in recent years, there has been a growing movement to enjoy Ezo deer as game meat. The Ezo deer sourced by our restaurant is meticulously managed to ensure deliciousness. Based on the belief that 'the cooking begins the moment the shot is fired,' we oversee all aspects of hunting methods, perfect bleeding, butchering techniques, and preservation, and we also limit the age and gender of the deer for meat purposes. We aim to provide our customers with the best meat, maximizing its deliciousness, and we hope to carry on the producers' passion through charcoal grilling. Depending on the day, we offer various cuts such as tenderloin, sirloin, and thigh.
The Mangalica pig, recognized as a national treasure of Hungary, was nearly driven to extinction about 50 years ago due to the spread of more efficient breeds. This globally rare pig was first imported live to Asia and successfully bred and raised in Tokachi, Hokkaido, resulting in the Tokachi Royal Mangalica Pig. Covered in long, curly hair, it is also known as the 'Woolly Pig.' This breed is very close to its original form and grows more slowly compared to typical three-breed pigs, requiring over a year of fattening to reach market size, while three-breed pigs take about six months. This extended growth period allows the meat to mature. Raised in Tokachi, which is at a similar latitude to Hungary, using traditional breeding methods such as 'natural grazing' and special feed (Tokachi-grown soybeans and wheat), the Tokachi Royal Mangalica Pig is characterized by its rich red meat and high marbling, which result from the time and effort invested in its raising. Additionally, its fat has a melting point about 10°C lower than that of typical three-breed pigs, providing a texture that melts in the mouth and is rich in unsaturated fatty acids. The melting point of Tokachi Royal Mangalica Pig fat is 26-28°C, while typical pork is said to be 35-40°C.
