This is the most highly regarded mackerel in Kushiro. The owner personally prepares the mackerel using domestically sourced fish. This is an authentic dashi-maki tamago made by the owner, who trained at sushi restaurants in Otaru and Sapporo. We wrapped the red meat of bluefin tuna, which is also used as sushi topping, with cream cheese and green onions in yuba.
