This course features a wide selection of Oita's most attractive ingredients, including Crown Jidori chicken, sashimi of squid, and a combination of Bungo mackerel and Bungo horse mackerel sashimi. The squid sashimi is "flash-frozen live squid sashimi" made from freshly frozen squid directly from Yobuko in Saga Prefecture, one of the largest squid fishing grounds in Japan, and fishing ports in Fukuoka, Oita, and Yamaguchi Prefectures, which are quickly processed by Sakana Ichiba chefs.
