Dashi broth with kombu soy sauce
A soba noodle restaurant ranked in the TOP 5000 of the food log in Hidaka Town, Hokkaido, visited during a farm visit in Shizunai. A choice of thin or thick noodles is available (thick noodles are shown in the photo).
The menu includes: ● Oroshi Zaru Soba (regular portion), octopus kakiage, white rice, and a raw egg.
The noodles are almost as thick as Kakuman and have a buckwheat noodle-like texture. The dashi (broth) is all kelp, and the warm soba-tsuyu my friend had at the same time had a particularly strong dashi flavor.
The octopus kakiage, with kabocha, burdock, carrot, and onion. Other than the octopus, the rest of the ingredients are average. It is easy to eat because the batter is small and not too sticky.
The rice with egg was delicious with the flavor of kombu soy sauce.
