The chef is so particular about his ingredients that he himself spends time in the fields, hunting, fishing, and gathering wild vegetables. He uses the best ingredients from Niigata to create dishes with depth using his own culinary methods.
Each dish is truly complex and has the best flavor, and every time you put it in your mouth or move your mouth afterwards, various expressions will appear in your mouth and then change again.
I recommend the course, but if you don't mind, the gibier course is hard to find anywhere else.
